Extraction (Coffee)
Extraction in coffee refers to the process of dissolving soluble compounds from ground coffee beans into water, creating the beverage we drink. It's the fundamental chemistry behind every cup.
When hot water contacts ground coffee, it dissolves sugars, acids, oils, and compounds like chlorogenic acid that give coffee its flavor, body, and character. The degree of extraction—measured as a percentage of dissolved solids—dramatically affects taste. Under-extracted coffee tastes sour and thin; over-extracted coffee becomes bitter and astringent.
Extraction depends on several variables: water temperature, contact time, grind size, and coffee-to-water ratio. A French Press steeps coarsely ground coffee for minutes, allowing thorough extraction. Espresso forces hot water through finely ground coffee under pressure for seconds, achieving intense extraction rapidly. Pour-Over Coffee methods balance these extremes.
The Third Wave Coffee movement elevated extraction to an art, with enthusiasts targeting the "sweet spot"—typically 18-22% total dissolved solids—to highlight each coffee's unique origin character.
